Tasting note :
What are we looking for from our Bourgogne? To be a pleasurable Pinot Noir.
With fruit and simplicity but without being banal. With a finish full of character that reminds one of its origins.
Élaboration :
Harvest and grape selection done by hand and transported in small boxes to the cellar.
Vinification takes place over 12 days in temperature controlled vats with a pre-fermentation cold maceration over 3 to 5 days.
The juice is either pumped over or the cap is punched twice a day dependant on the stage of the vinification.
Ageing for 18 months: 12 in oak barrels and 6 in tank.
