There is very little soil in this vineyard and then immediately rock, which bursts through in some places.
Les Puillets is a mineral 1er Cru, floral and graceful that will delight amateurs of precision wines.
Élaboration :
Harvest and grape selection done by hand and transported in small boxes to the cellar.
Vinification takes place over 12 days in temperature controlled vats with a pre-fermentation cold maceration over 3 to 5 days.
The juice is either pumped over or the cap is punched twice a day dependant on the stage of the vinification.
Ageing for 18 months: 12 in oak barrels and 6 in tank.

Best enjoyed with duck breast in a green pepper sauce. As well as with époisses and other strong character cheeses.
